Measure liquids in a clear liquid measuring cup set on a flat surface, filling to the line and reading at eye level so the bottom of the curved surface (the meniscus) sits on the mark. Use measuring spoons filled to the brim for small amounts, and don't use dry measuring cups for liquids — you can't read them accurately or fill them level without spilling.

A liquid measuring cup is clear, has a pouring spout and extra room above the top line, so you can fill it without it spilling and read it. Set it on a level counter — not held in the air, where it tips and misreads — pour in the liquid, then crouch down to read it at eye level. Liquid forms a slight curve called a meniscus, and the correct reading is where the bottom of that curve lines up with the mark. For small amounts, use measuring spoons and fill them right to the brim (level, not rounded), holding them away from the bowl so overflow doesn't drop in. Don't use dry measuring cups — the kind you fill and level off — for liquids: you have to fill them to the very top, which is hard to judge and spills as you move them. For sticky liquids like honey or syrup, lightly oil the cup or spoon first so they slide out cleanly. The most accurate method of all, especially in baking, is a kitchen scale: weigh the liquid in grams (water and most thin liquids are about 1g per ml), which removes any reading error.
