Freezing is the best way to keep bread beyond a couple of days: slice it first, pack it airtight in a freezer bag with the air pressed out, and freeze. Toast slices straight from frozen or thaw them at room temperature — and don't keep bread in the fridge, where it actually goes stale faster than at room temperature.
Recommended Slice, wrap airtight, and freeze (not the fridge) — toast from frozen or thaw at room temperature — Bread goes stale as its starch recrystallises, and that happens fastest at fridge temperatures — so the fridge is the one place you shouldn't keep bread, while the freezer essentially pauses staling and is the best option for anything beyond a day or two. Slice the loaf before freezing so you can take out only what you need; this is the single most useful step. Pack it airtight to prevent freezer burn and off-smells: press the air out of a freezer bag, or wrap the loaf tightly in foil or plastic and bag it, and label it with the date. Bread keeps well frozen for around three months. To use it, toast slices straight from frozen — they toast beautifully without thawing — or thaw slices or a whole loaf at room temperature in its wrapping so the crust doesn't go soggy; a whole crusty loaf can be refreshed in a hot oven for a few minutes to crisp the crust again. For the short term (a day or two), keep bread at room temperature in a bread box or paper bag, cut-side down, which keeps the crust crisp; airtight plastic softens a crusty crust but suits soft sandwich loaves. Don't refreeze bread you've fully thawed.
